The following five online courses comprise the Eating Behavior Counseling Certificate program, designed for persons employed in healthcare or human services and wanting a certification in Eating Behaviors Counseling. To qualify for certification, students should have: High school, HSED or GED degree; intermediate computer skills and access to a computer with internet, email & printing capabilities. Courses are $300 each. Some EBT courses will be offered only in the Spring semesters. See also Dietary Manager Certification.

The course covers basic nutrition principles and practices, includes process of digestion and absorption, sources and functions of nutrients, and nutritional needs during the life cycle and nutritional habits. Learn about making wise nutrition choices and the role of nutrition in optimal health. Additional topics include how to determine individual caloric and nutrition needs and current food issues. You will be able to assess your own nutritional health.
This course reviews the medically-prescribed diets needed for specific disorders and diseases. The specific diets for certain medical conditions such as diabetes mellitus and cardiovascular disease will be examined. Nutritional assessment techniques are introduced to evaluate dietary changes needed to manage disease processes.
Students develop knowledge of the principles and application of diet and nutrition as therapeutic measures in various disease conditions related to weight control, including under- and overweight/obesity, metabolic syndrome, diseases of the digestive system, and misc. disease conditions. Students learn to plan modified diets, write nutritional care plans individualized to meet nutritional needs of clients with weight-related health concerns, and become familiar with related medical terminology.
Teaches students how to facilitate change in clients' eating behaviors by providing related methods and interventions. A combination of education (what to do) and behavioral (how to do it) approaches to effectively improve food and health behavioral changes.
Obesity in children and adolescents continues to rise due to sedentary lifestyles and poor eating habits. This results in increased risk for Type 2 diabetes, heart disease, depression, musculoskeletal problems and self-esteem issues. This course will teach healthcare and human service professionals to assist clients in taking control of eating and weight management behaviors.
