Food Truck Series

Let Madison College show you how to plan, operate and succeed in the mobile foodservice business! Throughout this program, you will examine various mobile food business models and trends to develop your unique competitive advantage and market position. Become familiar with relevant regulations and laws to maintain proper compliance while practicing mobile cooking methods and appropriate kitchen conduct to optimize efficiency and food safety. Learn how to plan for equipment acquisition, layout design, and personnel to minimize start-up risk; and apply current marketing and product development techniques to increase revenue. Classroom lectures are combined with hands-on practices with experienced mobile food cart operators in simulated environments to give students ample opportunities to integrate theories with experience.

AJ Jones and his food cart

Alfonzo Jones III (AJ)

Alfonzo Jones III (AJ) is the owner and operator of Whimsy Dish (an 18' mobile kitchen) and the chef, food prep person, and planner for Whimsy Dish Catering LLC. He is a retired Air force Chief Master Sergeant who served over 25 years. He is originally from California and loves good food and making people happy. He is a graduate of the Madison College Culinary Arts program.
